Sweet Potato Fingers

These are so delicious that after Jack ate his fill and we went upstairs to play, my husband came home from work, saw the leftovers and devoured the whole plate before he even came up to say hello. Jack has been refusing to eat anything mashed or of a texture he doesn’t like, so sweet potatoes have been a tough one to get down. And it’s terrible because they are SO healthy, but I just gave in and put them out of my mind for now.

Last week I tried a new approach and it worked so well that Jack had me make 2 batches because he loved it so much. It is so easy and such a healthy snack that they can chew with just a few teeth. Take less than 5 minutes to prepare too. Here’s the recipe:

*1 sweet potato peeled and chopped into sticks

*In a bowl, massage them with olive oil

*Place on parchment paper on a baking sheet

*Sprinkle with a little salt (and for adults you can add pepper or even cayenne pepper)

*Place in the oven pre-heated to 350 degrees

*Bake for 15-20 minutes (the longer you bake, the crispier. I keep them a little soft for Jack to chew)

Let cool and serve!
