One of my favorite recipes so far: Gourmet Golden Beet Puree
This particular recipe has so much flavor and pizzazz that your baby will be smacking his/her gums (or whatever teeth they have) for more. And chocked full of Vitamin C, plus potassium, magnesium and folate, you can’t go wrong. They are credited with an impressive array of health benefits, including cancer prevention (due to their anti-oxidant content), the ability to boost the immune system AND the potential to reduce blood pressure in later life.
Here is the recipe:
2 medium beets (cooked)
2 tbsp homemade applesauce
1/2 small onion (chopped)
pinch ground nutmeg
(I added a few steamed carrots as well)
-I baked the beets. Don’t peel or chop them before you put them in. Just cut them from the stalk, scrub them under running water, wrap them in foil and put them in the oven on 360 for an hour. When they are done, the skins come right off.
-Saute half a chopped onion in a frying pan while your beets cook.
-Put the cooked beets, applesauce, onion and nutmeg into a blender.
-Puree and serve warm.
If you choose not to include onion in your baby food recipes just yet, then a nice alternative is to add one small, cooked carrot instead. This dish was so good I ate half of it, and it still made enough to last a full week for little Jack.
